Elation as Allium at Askham Hall secures Michelin Star
Published: 26 November 2019The Head Chef of Cumbria’s Askham Hall says he’s “overjoyed” after the renowned restaurant with rooms was awarded its first Michelin Star. The Great Britain and Ireland Michelin Stars 2020 were revealed last night at a ceremony in central London, with Allium at Askham Hall now joining an elite group of Michelin-starred establishments.
Located in the north east of the Lake District, Askham Hall is the former family seat of the Earls of Lonsdale and is steeped in more than 800 years of family history. Under the guidance of Head Chef Richard Swale, it has been steadily building up its reputation for food and drink since it opened its doors to guests six years ago. With menus inspired by produce directly from the Lowther estate and the surrounding Cumbrian countryside, the restaurant took on its own distinct identity of ‘Allium at Askham Hall’ last year. Richard Swale has been praised for his “innate understanding” of how to use the “fantastic produce” on Askham’s doorstep. He says, “The Michelin star is an acknowledgement of our desire to produce plates of food which are completely in harmony with nature. “The whole team is absolutely overjoyed to be awarded this prestigious accolade, which really reflects our philosophy of living off the land. We passionately believe in authentic flavour combinations, textures and colours, and are committed to re-establishing old growing and preserving techniques alongside modern styles of cooking. It’s a fantastic feeling to be recognised by Michelin in this way.”
Owner of Askham Hall, Charles Lowther, says, “This is tremendous news and a testament to the dedication, creativity and sheer hard work of Richard and his talented team. The cycle of life in the gardens and fields at Askham Hall dictate our menus and we are proud to take a leading role in the Lake District’s growing reputation as a foodie destination.” Allium at Askham Hall is open to non-residents, 7pm–9.30pm Tuesday to Saturday.
